In the mid 90′s we did some business with King Ranch. For several years the guys would travel to Kingsville, Texas and while there would stay in the “Big House.” Brad came home with this great recipe which they were served for breakfast.

This is my interpretation of the recipe from Brad’s description.
In a hot skillet saute onion, and peppers (green and hot to taste) To this add corn tortillas that have been torn into pieces. Pour whipped eggs into the hot mixture, stir til cooked. Top with cheese and salsa. You could add mushrooms, sausage, bacon, cubed ham, other veggies or whatever. It’s quick and easy and we love it.
