Sausage Hominy Casserole

This easy recipe could be a nice addition to your Thanksgiving meal.

1 lb. sausage browned & drained
1/2 tsp salt
1 can tomatoes
1/2 tsp pepper
1 can hominy
3 T green pepper chopped/can use a few hot peppers

Mix these ingredients and pour into baking dish.
Cover top with 2 cups Monterrey Jack Cheese mixed with 12 crushed soda crackers. Bake a 325 degrees for 1 hour.

Scalloped Corn

My mom acquired this great Old Norwegian recipe on a cattle buying trip over 40 years ago. The cookbook given to her finally fell apart but this recipe stayed intact, she makes it often…it’s been her specialty.

2 Tbsp Butter
1 Slice White Bread Cubed
1 can Corn
2 Tbsp Sugar
1 Cup Milk
2 Tbsp Four
1 Cup Cream
1 tsp. Salt

Melt 2 Tbsp. butter and pour over bread pieces. Combine with corn, sugar, milk, flour, cream, salt, and pepper. Pour into well greased casserole. Bake at 400 degrees for 35 to 45 minutes.
Double or triple it.
